Menu Plan Monday

One of the best ways to eat healthier while sticking to a budget?  Meal planning!  Plan your dinners for the week, check your pantry and freezer to see what items you have and what you need, make your grocery list, and stick to the list.  You'll cut down on waste and save money.  Here's our menu plan for the week:

Monday: Patty Melts
Tuesday: Chicken Parmesan
Wednesday: Leftovers
Thursday: Entree Salad
Friday: Oven-fried Catfish
Saturday: Pulled Pork Sandwiches
Sunday: Black Bean Soup

Organizing Junkie (http://www.orgjunkie.com/) has a pdf menu planner sheet that you can use to get you started.  Happy menu planning!

This is my first time making the pulled pork, here's the recipe:

    1 1/2 tsp kosher salt
    1 tsp chili powder
    1 tsp cumin
    1 tsp granulated garlic
    1/2 tsp black pepper
    1/2 tsp dried oregano
    5 lb bone-in pork shoulder
    1 medium onion
    3 cups beef broth
    2 cups water

    1. Combine spices in bowl, then rub all over pork. Cover and refrigerate over night.
    2. Slice onion and lay it at bottom of slow cooker. Place the pork on top of onions and pour broth and water over top. Cover and cook for 8 hours.
    3. Remove from slow cooker an allow to cool slightly. Shred meat with two forks.
